Chimichuri Sauce

Olive Oil    1/2   Cup

White Wine Vinegar   1/4   Cup

Onion, roughly chopped   1 Small

Basil – Spicy Thai preferred   ½   Cup

Cilantro, fresh   1/3   Cup

Garlic Cloves, peeled   4   Cloves

Oregano, fresh   1   Tbsp

Salt   tt

Red Pepper Flakes   1/4   Tsp

Black Pepper, cracked   1/4   Tsp

Skirt Steak   1 to 2   Pounds

METHOD

Place all ingredients in the bowl of food processor.
Process until all ingredients are very chopped, but not smooth.
Remove from processor and store, covered, in the refrigerator.

Please the steak and half of the Chimichuri Sauce in a Ziploc bag and refrigerate 1 to 2 hours. Remove steak from bag, wipe clean, grill to perfection.  Slice thin and serve with reserved sauce.
