Italian-Style Collard Greens and Beans

This dish will warm your heart, and actually strengthen it too!

COLLARD GREENS AND WHITE BEANS
INGREDIENTS
•    2 Tablespoons extra-virgin olive oil
•    1 onion, finely chopped
•    4 cloves garlic, minced
•    1/2 teaspoon red pepper flakes
•    Cooked Bacon, Chicken, or Ham if you like
•    1 bunch collard greens (about 2 lbs.), stems cut into ¼ pieces and leaves cut into 1/2-inch-thick strips – steamed for 5 minutes
•    3 cups of vegetable or chicken stock
•    12 ounces dry cannellini beans (pre-cooked) or 2- 15ounce cans of cooked cannellini beans
•    Coarse salt to taste
•    2 tablespoons red wine vinegar
•    Parmesan Cheese, grated,  to taste


DIRECTIONS
1.    Heat oil in a medium saucepan over medium-high heat.
2.    Sauté onion, garlic, and red pepper flakes until tender, about 4 minutes.
3.    Add meat if using and heat thoroughly.
4.    Add stock and bring just to a boil.
5.    Remove from heat, add collard greens, beans, and vinegar.
6.    Season with salt and pepper. 
7.    Serve with a generous addition of Parmesan cheese.
